A deep red-orange thick bowl of tomato soup is enough to get the taste buds geared up for something great. It is a great companion especially during those winter evenings. It is quite a popular soup option across the world.
One could say that it is quite a simple soup to prepare, but the key to a perfect tomato soup is the balance and harmony of the sweet, sour and acidic flavors. I prefer mine with some heat or spice in addition to the temperature of the soup. So, here I am with an easy and healthy version of tomato soup which brings in all the flavors and zing packed in one bowl of warmth.
The recipe below is good for about 2-3 people.
Here it is:
Phase 1 - Prep:
- Take 3-4 medium to large tomatoes (prefer the deep red colored ones), 3-4 cloves of garlic, 1 medium carrot (preferably red one again, half of a peeled beetroot, half inch piece of cleaned ginger (or 1/2 tsp of diced ginger)
- Cut them roughly into bite sized chunks and keep aside
Phase 2 - Cooking:
- Add the cut up chunks to a pressure cooker with 300 ml water, pinch of black pepper, 1/2 tsp of honey and salt as per taste
- Let it cook for one whistle
- Next, let it cool slightly
- Blend up the cooled mixture to a smooth consistency
Phase 3 - Finishing it up:
- Take the blended mix and put it on medium heat
- Adjust the consistency with water as per liking
- Adjust the salt and spices
- Bring it to a boil and let it sit on low heat for another two mins
- Finish it up with some butter
You could garnish with some basil leaves or fresh coriander before serving. You could also add some air fried croutons to it before serving.
I would strongly recommend to not pass it through a sieve and retain the fiber content.
Also, in case you prefer a thicker soup, you could:
- add 1 peeled potato or
- 4-5 cashew nuts or
- use lesser water while pressure cooking or
- use some corn flour in the end
