Pancakes are a pretty popular breakfast option across the world. Pancakes by themselves are quite good but with some simple toppings they could transform into a fabulous dish. One of my all time favorite topping to a pancake is the classic pairing of maple syrup. It still tops the list!
When I started to prepare pancakes at home, I have to confess I was quite intimidated. It is not something that we usually see being prepared in our Indian kitchens. I had probably eaten pancakes only at cafes or for me the 'fancy' places. They were also usually priced at the higher end. Hence for me, the amateur cook, by then it was a dish that would have been extremely difficult.
So, finally the day came when I mustered up my confidence to prepare pancakes. The first attempt was pretty much a disaster. After probably four or five attempts I got a hang of it. Finally! Now there is no looking back. I can whip up pancakes in no time and have been able to experiment as well with them a lot.
For the time being, here is my version of a basic eggless and wheat flour pancake recipe. It is a hassle-free and easy to follow recipe, the way I usually prefer in my cooking style. The amount of ingredients used should be sufficient for two people. Here it is:
Phase 1 - Prep:
- Mix 1 cup wheat flour, 1 tsp baking powder, 1 tbsp honey and 1/4th tsp cinnamon powder in a mixing bowl
- Add 1.5 cups milk, 1 tbsp olive oil and whisk them all to remove lumps
- Adjust the consistency of the batter with milk. It should have a sauce like, flowy consistency i.e. not too thin nor too thick.
Phase 2 - Cooking:
- Heat a flat non-stick pan on medium heat and very lightly brush with olive oil (important tip: wipe off extra oil with a kitchen towel)
- Let the heat be on high and pour around 1/4th cup batter and let it spread on its own on the pan
- Turn the heat to medium and let it sit till you see bubbles on top
- Flip it and the other side cook for about 1-2 mins
That's it! It is ready to be served.
Garnish and top them up with your choice of toppings such as maple syrup, cinnamon powder, fresh fruits, honey, jam, marmalade, caramel sauce, and so on.
