Since the time I have started eating pasta dishes, a personal preference has been to have simple, tangy and slightly spicy one. Because of the personal preference, my go-to red pasta sauce is the one shared below. It is exceedingly simple and easy recipe. It a burst of flavor in every bite and keeps you salivating till the end.
Also, it is quite a healthier version without compromise on taste.
One thing to keep in mind while preparing this sauce for pasta is to try to not overcook the tomatoes to preserve their freshness and tanginess. So here are the steps:
- Puree 3 large tomatoes and crush 6-7 cloves of garlic and keep aside
- Heat up 2 tsp of olive oil in a pan and add the crushed garlic
- Lightly sauté the garlic till you get a slight garlicky aroma
- Next, add the pureed tomatoes to the pan on medium heat
- Add a pinch black pepper, pasta seasoning, red chili flakes and salt as per taste
- Cook till the tomatoes soften, leaving still some of the freshness and tang to them
- Add pasta water or just some water to adjust the consistency of the sauce as per liking
- Adjust the level of spices as desired, especially use of little extra black pepper for the heat
That's all! It is ready to be used.
