Pasta is quite a popular and loved dish across the world. It has garnered lot of love over the years in India too as it is quite a versatile dish. One can get quite creative while preparing a pasta dish trying various permutations and combinations be it with sauce base, the herbs being used for flavor, the veggies or the type of meat being used and so on. I personally feel it is a dish that can be kept as simple as possible or complex, but it would still be a star dish.
While preparing it, a general step followed is draining away the water used to boil the pasta. This is something even I was doing for quite a while.
While watching a cooking show, I saw that I was doing it all wrong. Using the pasta water in the sauce adds quite a lot. It adds a velvety consistency and shine to it. When I further read up, it is an extremely basic and critical tip that every chef stresses upon.
After knowing this step and executing it every time there is no looking back. I reserve at least 1 bowl of the pasta water to add to the sauce and get a perfect sauce every time.
