Carrots are a pretty common vegetable found in our kitchens. We use them in salads, curries, sandwiches, side dishes, soups, desserts and what not! They are quite the versatile ones.
I prefer to have them in the refrigerator always since I use them in a variety of dishes but I need it usually in quite small quantities. Because of this, a common problem I used to face is dried out carrots after a couple of days. They used to be all wrinkled up and pretty much a waste as I couldn't use them. And I was not fine with wastage.
I started getting smaller quantities from the store but then that meant multiple runs to the store for just this. I wanted to find a fix.
So I thought to myself, the carrots seemed dried out i.e. the water was drawn out. And this happens while in the refrigerator. So just as an experiment I took a container filled with water and stored the carrots in it in the refrigerator. And well, it worked! I was able to use them fresh for about 7-10 days. I just had to replace the water every second or third day or when the water turns slightly cloudy.
When I checked online I found that people have stored carrots for a month using this method. Basically they need moisture to stay fresh.
